

Ingredients:
[For pancakes]
1/4 cup coconut flour
1/4 cup hemp milk
a pinch of salt
1 tsp vanilla extract
1 tsp maple syrup
1 egg
1 TB olive oil
[Other]
Organic chicken or turkey sausage (I used Applegate Organics Chicken & Maple Breakfast Sausage)
1 cup strawberries or favorite fruit
1/4 avocado + a pinch of salt and lemon
Instructions:
[For pancakes] Mix all ingredients very well in a bowl with a fork. Ensure ingredient batter is smooth before you finish mixing. Let the batter sit for approximately 3-4 minutes. After 3-4 minutes, batter should be thick enough to scoop out (not runny like pancakes). Heat oil in skillet. Scoop out ~ 1/4 cup servings of batter and drop into skillet. Press down with the spoon to shape them into flatter, rounder shapes (not too flat though!). Cook on each side until lightly browned and cooked through.
